An easy winter recipe which is perfect as a starter, lunch or even dinner.
Fry the sausage, leek and pumpkin in a pan with some olive oil for 8-10 mins, add the rice and herby salt and fry for a further 2 mins.
Add the stock and cook for 20 mins or until the rice is cooked (keep adding more stock if required). Just before serving grate a good tablespoon (or 2!) of Parmesan cheese and serve. It’s delicious!!
